dinners for when it's too hot to cook


Hey friend,

The heat wave hit us hard this week, and it's only the start of summer!

For me, when stepping outside feels like opening the oven, the last thing I want to do is actually turn one on. But we still have to eat.

This week, during the super hot weather, we kept things simple, fresh, and light.

Here are a few ideas for no-oven meal planning:

Green salads – Start with whatever greens you have, then pile on beans, chopped veggies, boiled eggs, cold chicken, tuna, nuts, or cheese. A drizzle of olive oil and vinegar, and it’s dinner.

Pasta salads - Boil up some noodles before the heat comes in or during the cooler parts of the day, then dress and top with all the things.

Snack boards – Think crackers, fresh fruit, sliced veggies, cold cut meat, cheese, pickles, maybe a hard-boiled egg or two. Grazing counts as a meal.

Sandwiches – A good old chicken salad or egg salad sandwich is an amazing way to eat well and beat the heat. PB & J isn't a bad idea either!

Stovetop quickie – If you can handle the heat for just 10 minutes, scramble some eggs, make a quick veggie stir-fry, or toss together a skillet meal using leftovers.

Wrap it – Tortillas or lettuce leaves filled with hummus, beans, rice, last night’s roasted veggies, or whatever you’ve got in the fridge.

Breakfast anyone? – I am not above a good bowl of cereal or granola with some milk or yogurt for dinner!

No oven. No stress. Just a little creativity and a willingness to keep it imperfect.
